While Indigenous peoples in Mesoamerica cultivated avocados for over 10,000 years, commercial avocado processing only took off in the late 20th century. Traditionally, avocados presented a huge logistical headache for commercial food brands because the fruit's natural enzymes cause rapid browning (polyphenol oxidase) as soon as the flesh touches oxygen.
